Ingredients for Pani Puri Balls:
For the Puris:
Semolina (sooji) – 1 cup
All-purpose flour (maida) – 1/4 cup
Baking powder – 1/2 tsp
Salt – 1/2 tsp
Warm water – as needed (for dough)
Oil – for deep frying
Steps to Make Pani Puri Balls:
Prepare the dough:
In a mixing bowl, combine semolina, all-purpose flour, baking powder, and salt.
Gradually add warm water to the mixture and knead into a stiff dough. The dough should be smooth and not too soft.
Rest the dough:
Cover the dough with a damp cloth and let it rest for 15-20 minutes. This helps in making the puris crispier.
Roll out and cut:
Divide the dough into small balls. On a lightly floured surface, roll out each ball into thin discs, about 2 inches in diameter. Aim for an even thickness to ensure uniform puffing.
Fry the puris:
Heat oil in a deep pan or kadai over medium heat.
Fry the rolled discs one at a time. Press gently with a slotted spoon to help them puff up. Fry until they turn golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Cool and store:
Allow the puris to cool completely before storing them in an airtight container. They should remain crisp if stored properly.
Serving:
To serve, fill the puris with your choice of fillings such as potato masala, chickpea salad, or sprouted beans. Top them with pani (spicy tamarind water), and garnish with chopped onions, coriander, and sev if desired.
Quick Pani Recipe:
Tamarind pulp – 2 tbsp
Coriander leaves – 1/4 cup (chopped)
Mint leaves – 1/4 cup
Green chilies – 1-2 (adjust to taste)
Roasted cumin powder – 1/2 tsp
Black salt – 1/2 tsp
Regular salt – to taste
Sugar – 1 tsp
Cold water – 2-3 cups (adjust for consistency)
Blend: Combine tamarind pulp, coriander, mint leaves, green chilies, roasted cumin powder, black salt, sugar, and regular salt in a blender.
Add water: Blend with cold water until smooth.
Chill: Refrigerate for a few hours before serving.
With these steps, you can create delicious pani puri balls that are perfect for any party or casual snack time!
