Here’s how you can make a similar All-in-One Mix at home:
Ingredients:
For the Mix:
Sev – 1 cup (store-bought or homemade)
Chivda (flattened rice) – 1 cup
Nylon sev – 1/2 cup
Peanuts – 1/2 cup
Cashews – 1/4 cup
Roasted chana dal (split chickpeas) – 1/2 cup
Fried moong dal (split green gram) – 1/4 cup
Puffed rice (murmura) – 1 cup
Sabudana (tapioca pearls) – 1/4 cup (optional, for extra crunch)
For the Spices:
Oil – for frying
Cumin seeds (jeera) – 1/2 tsp
Mustard seeds – 1/2 tsp
Curry leaves – 10-12
Red chili powder – 1/2 tsp (adjust to taste)
Turmeric powder – 1/4 tsp
Chaat masala – 1/2 tsp
Black salt – 1/2 tsp
Sugar – 1-2 tbsp (to taste)
Salt – to taste
Hing (asafoetida) – a pinch
Steps to Make All-in-One Mix:
Prepare the ingredients:
Fry the peanuts: Heat oil in a pan and fry the peanuts until they are golden brown and crispy. Remove and drain on paper towels.
Fry sabudana: Fry sabudana in hot oil until they puff up. Drain on paper towels.
Roast chana dal and moong dal: Roast separately until they are crispy.
Combine the mix:
In a large mixing bowl, combine sev, chivda, nylon sev, peanuts, cashews, roasted chana dal, fried moong dal, puffed rice, and sabudana.
Season the mix:
Heat a small amount of oil in a pan. Add cumin seeds, mustard seeds, and curry leaves. Let them splutter.
Add hing and the other spices: red chili powder, turmeric powder, chaat masala, black salt, sugar, and salt.
Stir well and cook for a minute to let the spices release their flavors.
Mix and cool:
Pour the seasoned oil and spice mixture over the combined dry ingredients. Toss well to ensure even coating.
Allow the mix to cool completely. It will become crispier as it cools.
Store:
Once cooled, store the all-in-one mix in an airtight container to maintain its crunchiness.
